Seven thousand islands, and a different country on each flight
Three island groups, 7,641 islands, and a ferry network that decides your itinerary before you do. November to May is the broad dry window, February and March the most reliable. The east coast runs on the opposite calendar: Siargao surfs from August to November, which is when the western islands are wet.

You do not do the Philippines. You pick a corridor and let the boats decide.
First trips usually run Manila to Palawan to the Visayas. Limestone towers and kayak lagoons at El Nido, sunken WWII wrecks and the green water of Kayangan Lake at Coron, then Cebu and Bohol where the roads actually connect and the ferries run hourly. Ten to fourteen nights covers it without rushing.
Second trips go north into the Cordilleras, where stone walled rice terraces stack into an amphitheatre at Batad and Sagada keeps its coffins in cave mouths at 1,472 metres. Or west along the Ilocos coast to Vigan, whose cobbled Calle Crisologo has been UNESCO listed since 1999. Or east to Siargao when the Pacific swell arrives in September.
Third trips are awkward on purpose. Batanes in the far north, closer to Taiwan than to Manila, weather permitting. A Tubbataha liveaboard in the middle of the Sulu Sea, which only sails mid March to mid June and gets booked years out. The country rewards the second visit more than the first.
The arrival city and the plain behind it: four airport terminals, the walled Spanish streets of Intramuros, glass towers at Makati and BGC, and two hours north an ash plain leading to a turquoise crater lake on Mount Pinatubo.

Karst towers rising straight out of the water at El Nido, sunken warships and the green mirror of Kayangan Lake at Coron, and a river running 8.2 kilometres through a cave north of Puerto Princesa.
A four kilometre white beach on Boracay backed by low palms, sugar cane and mango orchards inland, and Iloilo's old stone churches and market noodle houses on the mainland of Panay.
A river canyon of turquoise pools and rock slides at Kawasan, a million sardines swirling twenty metres off Panagsama Beach, and 1,776 grass domes rising out of Bohol's green interior.
Cane fields running up to Kanlaon's 2,465 metre cone, ferry piers and student cafes at Dumaguete, and a small round island of waterfalls, a centuries old balete tree and reef that rings the entire coast.
A reef break peeling off a wooden boardwalk at Cloud 9, palm lined roads across Siargao, and across the Bohol Sea a volcanic island with a white sandbar and a cross marking a cemetery that sank below the water.

The food shifts as you go, the country is easy to cross, and the things worth doing are spread right across it. A short list, not a phonebook.
Whole roast pig, seasoned inside with lemongrass and aromatics so it is eaten without sauce, which is the argument Cebu makes against every other version in the country. Zubuchon is the one Anthony Bourdain publicly called the best pig he had eaten. Carcar, an hour south of Cebu City, is the older market version: saltier, plainer, cheaper, sold by the kilo off the carcass.
Pork and offal noodle soup: round miki egg noodles in a broth boiled for hours, with shrimp stock, beef loin, pork innards, crushed chicharon and toasted garlic on top. Three houses in the same market claim the original, Deco's, Ted's and Netong's, and all three have been trading since the 1940s.
Orange rice flour pastry, deep fried to order, filled with Vigan longganisa, shredded green papaya and a whole egg cracked in before it is folded. Eaten standing at the stall, dipped in sukang Iloko cane vinegar.
Chopped pig ear and cheek, boiled then grilled then served spitting on a cast iron plate. The modern version traces to Lucia Cunanan, known as Aling Lucing, who added the grill, the brains and livers, and the sizzling plate. Her stall is still on Glaciano Valdez Street in Angeles.
The domestic flight map, not the road map, is what decides a Philippines itinerary. Cebu Pacific and AirAsia are the budget carriers. Philippine Airlines costs more but reaches smaller airports the others skip, including Basco in Batanes.
Oceanjet, SuperCat and Weesam run the fast craft that link Cebu, Bohol, Negros, Siquijor and Leyte. These are the workhorse connections of the central Philippines, with multiple departures a day on the busy routes.
2GO runs eighteen large passenger vessels calling at seventeen terminals, and the Manila to Cebu overnight is the flagship crossing. Tourist class is a dormitory. Cabins have bunks and air conditioning. It doubles as a night's accommodation.
Wooden outriggers do everything the ferry network does not: island hopping days, the Palawan crossings, and the multi day expedition boats through the Linapacan group. This is the part of the trip people remember and also the part weather cancels.
Stone walled terraces stacked into a natural amphitheatre above a village of about 1,500 people, still farmed by Ifugao families on the same integrated irrigation system they have used for centuries. UNESCO listed since 1995. The walk carries on down to Tappiya Falls at the bottom of the bowl.
Cobbled streets and stone bahay na bato houses with wooden upper floors, closed to cars and lit at night. UNESCO inscribed it in 1999 as the best preserved Spanish colonial town in Asia. Kalesa horse carts still work the streets, which is how most people cover the outer blocks.
The volcano that erupted in 1991 left a turquoise lake in its crater. Getting there means about an hour in a 4x4 along the O'Donnell river bed, then a walk of 5.5 to 7 kilometres up the stream bed with roughly eight crossings, which takes another hour and a half to two hours.
Snorkel only, no feeding, no baiting. A Butanding Interaction Officer rides every boat and manages entries: six swimmers maximum in the water at a time, three metres minimum from the head, four from the tail, no touching and no flash. The programme was built with WWF Philippines and the local government from 1998.
Most of what goes wrong in Philippines is a scam rather than a threat, and the scams are specific enough to name. Staying alert is worth more than staying scared.
Most trouble is commercial and opportunistic: strangers who befriend you and then drug your drink, tampered taxi meters, and street robbery that sometimes involves weapons. Water and weather matter more than roads, since ferries have a poor safety record and sailings suspend at short notice through the June to November storm season. The serious violent and kidnapping risk is concentrated in western and central Mindanao and the Sulu archipelago, which normal routes do not touch.
A friendly stranger, often a woman or a woman with children, starts a conversation with a lone traveller in a public place and builds rapport over an hour or more before offering food, a drink or a sweet laced with lorazepam, which is flavourless and odourless. The victim wakes hours later without their valuables. Police cases in 2025 and 2026 centre on Binondo and Makati in Manila, including a visitor robbed of 170,000 pesos in May 2026.Take nothing consumable from someone who approached you, including sealed packets, sweets and street food offered as a gift, and accept drinks only from the bartender's hand. If you feel suddenly and unexpectedly dizzy, tell bar or restaurant staff on the spot rather than heading outside for air.
Kerbside drivers at Manila's airport refuse the meter and quote a flat fare several times the real rate, or claim not to know the route and let the meter run. UK FCDO records a more serious version in which taxi drivers work with accomplices to rob and harm passengers, so the weak point is the kerb rather than the price.Book Grab in the app from the terminal's designated pickup zone, or use the fixed price coupon counter inside the building. Both are indoors, so there is never a reason to accept a ride offered to you on the kerb.
Two or more people work a lone traveller in a public place, one opening with a request for directions or a claim of a shared connection, the second joining to make it feel ordinary. They build trust for as long as it takes, then take valuables or talk the victim into handing over cash. Local reporting also documents a card game version worked on visitors in Ermita, Manila.Treat a stranger who wants your time rather than your money as the warning sign, and do not let a street conversation move you to a second location, a home, a bar or a game. Answer a direction request while walking, not while standing still.
